Hello, I’m back, hope you haven’t missed me too much 🙂
WOW….
What an amazing 10 days it has been in Spain with our friends, we’ve eaten and drank our body weight in food and drink and I can’t believe it is all over and back to reality for me. Unfortunately we did have a couple of bad days of weather including a bad thunderstorm but it didn’t dampen our spirits. Then we got stuck in Spain as our flight got cancelled and ended up going to another hotel back in Benidorm not know when we would actually get home. Â We finally got home late Friday night.
This is where we have just stayed if anyone is interested Magic Robin hood.
It has been amazing not having to think about cooking or planning meals and I feel so much more relaxed even though I was ill with a bad throat and cough. We have also got my friends Wedding on Saturday which will be lovely.
This week I will be cooking freezer/pantry surprise as I can’t be bothered to go shopping :
Cheese & bacon potato skins with salad
Lamb shanks in red wine sauce with vegetables
Tuna Pasta bake
Cream cheese chicken wrapped in smoked bacon with chips/new potatoes and salad
Lasanga
Wedding breakfast (Friends)
 Roast dinner with all the trimmings

Glad you enjoyed your holiday, getting stuck without a flight is something that terrifies me, I’m happy it all worked out in the end. Your meals sound great, I haven’t had a tuna pasta bake in ages. Enjoy the wedding.

Wow! What an eventful holiday! I hope you are back to some semblance of normality.
I’ve been back from the states almost a month and I still don’t think I have recovered yet!
Easy meals, for now, will be useful.
