Every year, without fail I would help my mum make her christmas special treat that everyone in the family goes mad for, It’s my mums famous Brandy Truffles, they are definitely not for kids.
My sister in Law Rachel from Coffee, Cake, Kids wrote about them a while ago but I thought I would share it again with you all. They are super easy to make and don’t require any baking.
All you need to make these are:
Ingredients:
150g Bournville or other good quality dark chocolate
40ml brandy or rum
50g unsalted butter
60g icing sugar, sieved
50g ground almonds
Approx 16 small paper cases
Break up all of the chocolate into a bowl and put this over a pan of hot water or place in microwave (becareful not to burn it). Add the alcohol and the butter and mix until melted completely. Finally mix in the sieved icing sugar and ground almonds until well blended.
Just leave the mixture in a cool place until it is firm enough to handle. Divide into approx even sized pieces and roll into balls. You can either grate any left over chocolate or use chocolate sprinkles, place on greaseproof paper and roll the truffles in it. And finally put into the little cake cases.
These are gorgeous. A little tub of them would make a fab gift for a teacher or family member – if you could resist eating them first!!
