Meal Planning Monday 15/04/19

We have got quite a few birthday’s this month so busy times ahead. We all got struck down with colds over the weekend too so felt a bit sorry for ourselves, but we’re on the mend now.  I still need to go food shopping too so are living out the freezer.

Meal planning seems to be getting harder again with trying to find more new meals to try.  Freddie comes home every night and eats us out of house and home, so we are also trying to find new ideas for him too.

This week I am cooking:

Beef and broccoli with rice

Sausage & vegetable bake

Fish, Chips & Beans

Chicken chow mein

Treat Takeaway

Chilli Burgers & chips

Meal Planning Monday 08/04/19

WOW! What a shitty week last week was for us and our family, but we will get through it.    Anyways it’s a new week, new dawn, and a new meal planning.

The weather didn’t help really either as it was cold, wet and miserable but hopefully we will start to see the appearance of that bright ball of fire in the sky again very soon.

This week we will be having:

Lamb shanks in red wine sauce, roast potatoes and vegetables

Tex mex chicken with garlic bread

Sausage Casserole with creamy mash

Quiche and savory rice

Homemade meatballs and pasta

Meal Planning Monday 01/04/19

The sun made an appearance again last week and on Tuesday I was working from home and I managed to get 2 loads of washing on the line outside to dry, it felt great.  We had a lovely weekend of visit family & me seeing a friend who popped over Saturday and we were able to sit in the garden enjoying the sun while Freddie napped.

Meal Planning Monday 25/03/19

The last week of March already, where did it go.  It has been a fairly busy month with birthday’s but I quite like it a bit mad.  We have been pretty good at sticking to our meal planning, and haven’t wasted much as if i’ve done batch cooking I’ve frozen the remaining for another meal.

Meal Planning Monday 18/03/19

Last week we had snow, hail & rain hit us the weekend all in the space of about an hour then storm “Gareth” hit us in the week which was great fun….Not.  So hoping this week will be better.

This week it is my nephew Jack’s birthday, can’t believe he is going to be turning 11.  We will be going over for tea and so he can show us all his lovely gifts.

This week we are cooking:

Meal Planning Monday 11/03/19

Last week was OK, the weather was better but roll on summer now.  It was my Dad’s birthday so we went over for tea Monday evening.  The rest of the week just went by in a blur.

This week again we are trying new meals so will let you know how they go down with the husband.

Meal Planning Monday 04/03/19

Seriously where did February disappear too?

Last weekend went by so quickly too as it was my friend’s wedding Saturday and we were child free for the whole day and evening, which was lovely but didn’t half miss him.  I also found out I was going to become an Auntie again, this will be nephew/niece number 6.  This week is also my Dad’s Birthday on Monday so we will go to my parents for buffet style tea.

I have been scouring the world of pinterest to try and get some different meal ideas as we have both said we are getting bored.

So this week we are going to try

Meal Planning Monday 25/02/19

Another week and nearing the end of another month.

I was solo parenting last weekend as the husband, his brother & their friend went off to Amsterdam for a music festival and then this weekend it’s my friends wedding on the Saturday and Freddie’s off to stay at the In laws.

I’m just counting down the days till our holiday to Spain now with my family especially as we are in double figures now.

This weeks I am cooking:

Pork chops with dauphinoise potatoes and vegetables

Cheese & bacon quiche with rice and salad

Jacket Potatoes with beans/cheese/Tuna Mayo

Garlic & rosemary grilled lamb chops, creamy mash, veg and gravy

Meal Planning Monday 18/02/19

Well I failed at this last week and I was doing so well since starting back with it.  I think with having a poorly boy, looking after him was our main priority but luckily he is back to normal now.

Last weekend I went on my friends hen do to Nottingham, it was lovely and a nice catch up with our friends.  We did so much from Friday – Sunday and I am exhausted now writing this, before heading back to work tomorrow.

So this week I am cooking:

Chicken stir fry with egg noodles

Lasagna & garlic bread

Jacket potatoes, Tuna/cheese/beans & salad

Quiche, beef rice & Salad

Fish cakes, vegetables & cheese sauce

Making Butternut Squash Soup at home | Recipe

I love cooking and baking but never imagined making my own soup, I think the fact of just picking up a tin is way more convenient sometimes.

Then one Sunday a few weeks ago I looked in the cupboards and found a butternut squash so decided to make some soup.  I googled what I needed and I had everything in the cupboards/fridge to make it.

So here’s how I did it.

Butternut squash soup

Ingredients

  • 1 butternut squash – peeled and deseeded, cut into 3cm/1¼in cubes
  • 1 red bell pepper
  • 2 large onions (roughly chopped)
  • 2 medium carrots (peeled & roughly chopped)
  • 1 tablespoon of honey (optional)
  • 5cm/2in piece fresh root ginger, peeled and chopped (I’ve used garlic too)
  • 2 tablespoons of oil
  • Salt & pepper
  • 1.5 litres/2½ pints of vegetable stock

Recipe

  • Preheat the oven to 200C/180C Fan/Gas 6.

  • Tip the prepared squash, onions, carrots and red pepper into a large, resealable freezer bag.   Add half the oil, salt and pepper and toss everything together until the vegetables are evenly coated. Tip into a large roasting tin and spread out to form a single layer.

  • Roast in the oven for approx 40–45 minutes, or until tender and tinged brown. Drizzle over the honey, if using, 5 minutes before the end of cooking.

  • Place the large, deep-sided saucepan over a medium heat, add the remaining oil and when it is hot, add the ginger or garlic and fry for a minute. Pour in the stock and bring to the boil, then stir in the roasted vegetables and add more salt and pepper.

  • Remove the saucepan from the heat and, using a hand blender, blend the mixture until smooth. Return to the heat to warm through and serve hot with crusty bread.

So there you have it, homemade butternut squash soup
